This is a fantastic Friday night dinner and if you cook enough, you’ll have lunches sorted for the weekend too.

Another absolute family favourite. Quick to make, quick to cook and everyone loves them.  These chicken wings are a great alternative to the fast food variety…

How I do it….

  • I usually cook 2 kgs of wings, double the recipe and spread them over 2 baking trays
  • It’s definitely worth tracking down the Chipotle Chillis in Adobe Sauce as they’re what give the wings the delicious smokey flavour - see image below for the brand I use. You should be able to find them in deli's and rather than throw the rest out, put 2 chillies and some sauce in small ziplock bags and freeze until you need them.
  • I always bake the wings in the oven and if they aren’t browning and crisping up as they should, I put them under a hot grill for a few minutes.  Just be careful to watch them closely as they burn very easily
  • They’re so full of flavour I usually just serve them with a salad as I don’t think they need a sauce (although guacamole makes anything taste better!)
