Easy Slow Cooked Chicken Chilli

Quick, healthy & TASTY recipes for busy veterinary professionals

Thursday nights are crazy at our place as there are two different school pick up times, footy training, early dinner for two who are off to Scouts and later dinner for two of us left at home.  So I need something that can be ready to go for the early eaters & still good for the later eaters and I should mention here that I don’t have a microwave!

So tonight it’s .....

‘Clean & Easy Slow Cooked Chicken Chilli’

from my favourite recipe guru ‘Kira Westwick’.

How I did it….

  • I used 1kg of mince as I like to have heaps left over for lunches & snacking and so I doubled the recipe and also added a can of sweet corn
  • The Chipotle chilli that Kira uses may be a little tricky to find but they add a really lovely smoky flavour.  Once you’ve tracked them down (check health food shops & search online for ‘La Morena chipotle peppers in adobe sauce’) buy a couple of tins for the pantry.  You’ll only need to use one or two chillis per recipe as they’re quite spicy and there are maybe 10 or so chillis per can. As Kira mentions in the recipe, I also freeze the leftovers chilli’s in little ziplock bags (see image)
  • I don’t have a slow cooker but as I work from home I cooked it after lunch & left it on a very slow simmer for a couple of hours.
  • I added extra water as I was worried it would dry out 


The results?

Very tasty and perfect for a multiple sitting meal.  Even better there is quite a bit left over for lunches.  You could take some to work in a container & some left over salad in another or even take along a couple of wraps.  I know my kids will be having it for lunch too - one less meal I have to worry about :)    You could even freeze some for an even faster meal in the future.

Here's my version - not quite as flash as Kira's but it tasted great.  I would also not add the extra water as you can see my version isn't quite as dry as Kira's in the image at the top.
