Gooey Chocolate Pudding

Oh...my...goodness! I made these for the first time this week and they were AMAZING!
The evenings must be getting colder as over the weekend I felt like cooking an easy, warm dessert.....and then I remembered Kira's Chocolate Pudding recipe that I've been meaning to try for awhile. I'm a fan of the good old self saucing chocolate pudding so was keen to see if Kira could come up with a healthy version.

How I did it...
To be honest I've only made them once so I don't have any variations, and with a recipe that only requires 5 main ingredients there isn't much to go wrong!
- The chocolate I used is 'Green & Black's Organic Dark Chocolate' - it's 70% cocoa so has an amazing flavour (and doesn't get nibbled on by the younger members of the family!). You can buy it at Woolworths and it can be found with all the other chocolate
- I do have almond meal in my pantry so I'm not sure if you can subsitute plain flour but my stomach does appreciate that it's gluten free!
The results....
The best part about these puddings (apart from the taste obviously!) was how they made you feel afterwards. Both my husband and daughter commented that they didn't feel stodgy or heavy after eating them - even with the copious quantity of cream they both added to them!
Seriously - just putting this blog post together and thinking about these gooey, chocolatey, warming little desserts is making my mouth water - you definitely have to try them. I had one left over and so had it with my coffee the next day and even cold is was fabulous - kind of like a mud cake or a browny without being too sweet, rich or stodgy.
