Parmesan Crusted Chicken

Another favourite recipe of my family that also makes excellent lunches - in salads or sandwiches

I love recipes that aren't too complicated and that can be made using basic ingredients in my pantry.  I also love anything that can be cooked in the oven as once it's in there I may be able to squeeze in a bit more work before dinner!

How I do it....

  • I use 1.5 kgs of chicken (preferably tenderloins or thighs) mainly because my family eats so many of these but also so I'll hopefully have enough for lunces for the next two days 
  • Using this much chicken means I have to modify the recipe somewhat, so I use about 6 to 8 tablespoons of wholemeal flour; double the amount of cheese, salt, pepper, eggs, dried herbs, but I keep to 2 garlic cloves (or if I don't have fresh garlic, garlic powder also works well)
  • Sometimes I use 1/2 wholemeal flour, 1/2 fresh wholemeal breadcrumbs
  • I use my trusty olive oil spray bottle from Woolworths (see image on the right) to spray the chicken lightly as I have never perfected the 'drizzle' and usually end up with a 'puddle' instead
