Honey Spice Banana Muffins

Quick, healthy & TASTY recipes for busy veterinary professionals
This one’s a winner! You can eat them as a quick breakfast or a healthy morning tea – just don’t eat them all in the one day.
Before I go any further I should mention…. I don’t eat bananas. I never have and I never will which means I haven’t personally tasted this recipe and I’m only able to go on the opinions of my family. But as these muffins disappear quickly every time I’m taking that as a good sign!
This recipe comes from a book I received from my local green grocer and was published by the Brisbane Produce Market. As I haven’t been able to source it online I’ve scanned the actual recipe and you can download a pdf version here.
So this week it's....
'Honey Spice Banana Muffins'
from the Brisbane Produce Market's 'Healthy Lunchboxes for kids of all ages'
How I did it….
- These are best made with really, really, ripe bananas – in fact the riper, browner & squishier the better as they make the muffins more moist and tastier.
- I use a silicone muffin pan lightly greased with butter – don’t use oil as it can leave a sticky film that’s very hard to remove
- The big change though…….I never buy low fat anything as in my experience low fat always equals high sugar, so my preferred yogurt is Jalna BioDynamic Organic Whole Milk Yoghurt. I’m happy eating this one but my sweet tooth family prefer Jalna Sweet & Creamy Greek Yoghurt both of which are available at Woolworths and I assume Coles.
The results?
The recipe makes 12 good sized muffins and each time I've made them...awesome!
