This meat free alternative to traditional shepherds pie is perfect for the cooler weather.

This is one recipe I've been making for quite a few years and it ticks all the boxes.  It's super easy to make; is hearty, filling AND tasty; and even though it's a vegetarian version, even the meatlovers will enjoy it.  

I even made it for my very traditional in-laws who are in their 80's and they both loved it - my mother-in-law even asked for the recipe!

How I do it....

• Sometimes I'll use all sweet potato or all potato for the mash on the top - but using at least some sweet potato definitely tastes the best.
• I think cheese on top is essential & prefer to use a generous amount so it has a nice crunchy top
• I usually make it using canned lentils which makes it even faster to cook
• It will easily make enough for 6 people - possibly 8 if served with a salad which means unless you have a very large family, they'll be plenty left over for lunches for the next few days.
