The BEST Gourmet Chicken Burgers

A friend gave me this recipe over 15 years ago and it's still something I make regularly. Everyone loves them, they're very quick to make and work well on those nights when you and your family are not necessarily eating at the same time. AND they're perfect for lunches - what more could you ask for?

The Avocado Cream is sensational with the burgers and is the highlight so it's definately worth stopping off on the way home to pick up an avocado and some cream cheese if there's none in your pantry.

So here it is..the recipe for....

Gourmet Chicken Burgers

You'll need:

500 grams chicken mince

2 rashers of bacon, chopped

1/3 cup parmesan cheese, grated

2 shallots or 1 small onion, finely choped (or grated)

1 egg lightly beaten

1/2 cup breadcrumbs

1 medium carrot, grated

1 medium zucchini, grated

1 tablespoon fresh thyme or 1 teaspoon dried (NOTE: I don't like thyme so I don't use it)

Now you need to:

Combine all ingedients in a bowl and mix well. I find it easiest to use my hands to mush it all together.

Divide mixture into equal sized patties - 6 to 8 depending on the size you prefer.

Cook in a frypan or on the barbeque until cooked through and brown of both sides.

Serve with Avocado Cream:

1 avocado, mashed

125gms softened cream cheese

1 tablespoon lemon juice

Mix all ingedients together.

Serve on toasted buns or toasted turkish bread with thinly sliced tomato, cheese and lettuce. Or if you'd prefer, the burgers are also lovely as part of a fresh salad with or without the bread.
