The BEST sweet potato brownies

Ok...before you press 'close' on this blog post.....after all...a brownie made from sweet potato? Are you kidding? Just give them a go..... they really are AMAZING!

We have a batch of these on hand all the time - a couple in a container to take to work and school and the rest frozen, ready to take out as required and they are AWESOME!

They're super easy to make - grating the sweet potato is the only time consuming part and even that won't be an issue if you're lucky enough to have a food processor that will do it for you.

So here is it...the recipe for ....

Sweet Potato Brownies

How I do it......

  • Baking time: I bake it in a square tin which takes about 40 minutes although I prefer them to be more solid and less gooey
  • They're also awesome baked in muffin tins (saves cutting them up & they cook faster!) and I know Kira has also made them in doughnut tins
  • I do drizzle melted dark chocolate (Green's Dark 70% - available from Woolworths & Coles) over the top before cutting into squares as it adds to the flavour
  • If you're using rice malt syrup and you know you like things sweet, you might want to try adding a bit of extra honey 
  • They're so moist that they do go mouldy within about 3 days so I leave 2 days worth out and then freeze the rest
  • Below is an image of Kira's brownie's with Peanut Butter Whip as icing .....yum!!
