The easiest, healthy meal ever - Baked egg and mushroom!

With this recipe there's absolutely no excuse - and I've got some super easy photos to follow.

I don't know where I first saw this recipe so I can't give you a link, but I've added a few of my own touches anyway,

You can just make the baked egg in the mushroom but as I often have this for lunch I like to add a few extras.

So here it is...the recipe for ...

Baked egg and mushroom.

Ingredients (per person)

1 x egg

1 x large field mushroom

Small handful of baked sweet potato/potato or whatever you have left over (optional)

Large handful of salad greens, spinach, etc. (optional)

Crumbled fetta cheese - I like the smooth, creamy danish variety for this meal (optional)

Salt & pepper

NOTE: This can be baked in the oven, but because it seems like a waste to heat up the oven for one person I 'bake' it in a frying pan with a close fitting lid. If you had a mini oven that would be perfect. I haven't tried cooking this in a microwave becasue I don't have one!

Method

Step 1

Heat up the oven to 180c or heat up the frying pan. Remove the centre stalk from the mushroom

Step 2

Lightly oil the frying pan or the oven proof dish and place the mushroom in the centre.

Carefully crack the egg and slide it into the mushroom.

 

Step 3

Oven baking: Place mushroom and egg into the oven and cook until the egg is how you like it

Frying Pan: Place lid over pan and cook on a medium heat until the egg is how you like it. I prefer mine quite firm so that's around 7 minutes.

Optional: place leftover roast sweet potato, etc in the pan for the last couple of minutes, turning regularly, to heat up.

Step 4

Place salad mix, spinach, etc. on a plate and gently add baked mushroom and egg on top. Add heated sweet potato, potato, etc. and then sprinkle with fetta cheese. Season with salt and pepper.
