Your family will be seriously happy about this one. My whole family absolutely love them!
I've cooked this one many, many times and it's one of my favourite Kira Westwick recipes. I really think this is one of the best example of why I love using Kira's recipes - she refuses to sacrifice taste when designing healthy recipes!
I always cook about 1.5kgs of chicken so there is plenty left over for lunches over the following days - it usually doesn't last that long though to be honest!

How I did it....
- I often use 1.5kg of chicken and I don't necessarily multiply the rest of the ingredients by 3 - I usually multiply them by 2 and a bit
- I've made this successfully using the following cuts: chicken thighs cut into thick strips; tenderloins and breast also cut into thick strips
- The recipe lists 1 cup of buttermilk and I have to admit I rarely have buttermilk sitting in my fridge (and if I do you can gurantee it's gone off!) so each time I make this I make my own as it's super easy: pour 1 cup of milk into a bowl and stir in ONE tablespoon of EITHER white vinegar OR lemon juice and leave to stand for 5 to 10 minutes. When it's ready the milk will be slightly thickened.
- My family aren't keen on the taste of the normal coconut oil so I either use the oil that has had the coconut taste removed or I use olive oil
- Undoubtedly the absolute family favourite is to shallow fry the pieces as they really do come out nice and crunchy, but as a time saver for me I prefer to spray the pieces with olive oil and then cook them in the oven. Still lovely and tasty but maybe not quite as crunchy. I also use this fabulous refillable oil sprayer that I found at Woolworths - much cheaper and more convenient than buying aerosol spray cans!
The results?
Oh my ....this is the BEST crumbed chicken I have ever tasted! I guarantee your family will love it - and even better there will be plenty left over for you to take to work the next day either in a sandwich or with a quick salad - perfect!
